Turkey Pilaf

Ingredients
- 250g basmati rice
- 1tbsp oil
- 400g turkey breast, cut into pieces
- Salt and pepper
- 1 packet Thai curry sauce
- 1x400g tin condensed milk
- 225g baby spinach, washed
- Big handful coriander leaves
Method
- Cook the rice according to the instructions on the packet. Heat the oil in a big pan.
- Season the turkey with salt and pepper and fry over a moderate to high heat until browned.
- Add the curry sauce and coconut milk and simmer over a low heat for two minutes. Stir in the spinach and the cooked rice and warm through.
- Sprinkle with coriander leaves just before serving and serve with poppadums and tomato salsa.
