Turkey Pilaf

Serves: 4

Ingredients

  • 250g basmati rice
  • 1tbsp oil
  • 400g turkey breast, cut into pieces
  • Salt and pepper
  • 1 packet Thai curry sauce
  • 1x400g tin condensed milk
  • 225g baby spinach, washed
  • Big handful coriander leaves

Method

  1. Cook the rice according to the instructions on the packet. Heat the oil in a big pan.
  2. Season the turkey with salt and pepper and fry over a moderate to high heat until browned.
  3. Add the curry sauce and coconut milk and simmer over a low heat for two minutes. Stir in the spinach and the cooked rice and warm through.
  4. Sprinkle with coriander leaves just before serving and serve with poppadums and tomato salsa.
